I love that it’s this wonderful time of year even if there is still snow on the ground. It also gets me super excited for summer and I can’t wait to tell you all the things I do here in our home to prepare for a fun summer with the kids. Yesterday, I spent some time in the school pickup line and made us a four week menu plan! I rarely do this because we like to eat based on how we’re feeling, but we have a busy next month and I wanted to at least have some ideas. I prefer to go week by week, but sometimes it’s just necessary to have more ideas right at my fingertips so I can make less decisions. I talk about this frequently but it’s worth mentioning again: when meal planning for our family, I only ever pick three meals for the week. I find that we have almost no waste this way. It allows for leftovers, a spontaneous dinner out or pizza in, breakfast for dinner, etc. I don’t ending up wasting groceries for a meal I don’t cook. It works so well for us. Of course I have a few easy meals in mind if we need an extra night - even if it’s grilled cheese and tomato soup or something similar. I went through and chose nine meals that we all really enjoy and put them in my calendar for the next month! This way, I at least have something jotted down when we’re scrambling.
