| I had an email all ready to go to you today with a curated look at the perfect lemon cookie. However, I sat down to send out the email and decided to go with a more down-to-earth, realistic look at recipes today. (Spoiler alert: it really is an amazing cookie, so don't forget to add it to your spring baking list.) It's spring break here, and we are home all week (much to my kids' dismay as most of their friends are out of town at Disneyland or on cruises or anywhere that's not Idaho). We have little activities planned throughout the week, but mostly, we're hanging out at home, getting spring cleaning done, enjoying a more laid back schedule, and I'm doing some cooking and baking for fun (rather than recipe testing for the blog!). Here's What I've Made So Far: - Buttermilk Banana Bread (a double batch made five mini loaves + a longer mini loaf in the cocktail bread pan {aff. link} I'm loving right now for quick breads)
- Homemade brownies in order to crack the code on how to definitively get a shiny, crackly top NO MATTER THE RECIPE. I'm making another batch today with a different recipe, and I'll keep you posted!
- Hulk muffins for St. Patrick's day breakfast yesterday. You can see in the top right corner of that picture the note I left for the kids by the muffins with a cheery message + morning chore list. π
- Chicken enchilada casserole for dinner last night with skillet broccoli. This casserole is one of my favorite dinners to throw together after I find myself with a rotisserie chicken.
Here's What I'm Making the Rest of This Week: Still eating these every morning AND have gotten Brian started eating them, too, so I'm making a big batch to get us through the week. These sheet pan chicken fajitas are dinner later this week. They are a family favorite. Making homemade pizza either Thursday or Friday night. This is the pizza dough I always use (the nearly 1,000 5-star reviews don't lie). However, I have also been making a sourdough pizza dough recipe the last few weeks, and it is GOOD but does take overnight planning, so we'll see how ambitious I am. This is the no-cook pizza sauce recipe I use every time we make homemade pizza. In full disclosure, I'm not making this, but my 17-year old is (he's on dinner duty this week and chose this recipe). It's a really old recipe on my website - I grew up eating this lasagna, and it is my fave (new photos coming soon!).
