Spring is in the air – I can feel it! (Just, like, don't look outside if you live in Minnesota π.) My weekly dinner menus are slowly turning over from soups and stews to salads and bowls filled with lots and lots of color. I am basically willing spring into existence through dinnertime!
This is the only list you need as we head into some hopefully warmer, sunnier weather. Some of my all-time favorite dinner recipes for spring are below, including lots of weeknight wonders (because spring is BUSY, too!).
My husband says this is his new favorite salmon recipe! And I can't disagree. Not only is it bright and beautiful, but is the best combo of smoky, saucy, crunchy, and fresh. It is SO good.
When the weather starts to get warmer, I know it's time for this potato salad. I've already had this for lunch several times this month, and every bite just carries me to a really joyful place. I want this for you.
I love these meatballs so much. SO fresh and so yummy! I like them on a squishy, messy sandwich, but also love them on a rice bowl (or honestly, just poppin' them straight out of the pan).
These are the perfect vehicle for any leftover veg you have lying around this spring - combine it with ground chicken, fluffy quinoa, and drench it in a simple, limey sauce and spicy mayo over top!

These are seriously such a delight. That creamy corn on top is the perfect combo of cool, creamy, sweet, and crunchy. It's all ridiculously easy to make and a 10/10 for everyone in my house!
