This ultra-tasty chicken garners two thumbs up and declarations of "this is bussin'" from my family.
It's one of those widely loved dinners that pleases everyone's palates, especially because they can dish it up however they like! I hope you love it, too!

I came down with a ridiculously annoying and rather stubborn cold the day before my birthday, so my plans to lay low were definitely accomplished!
Our Valentine's Day was also very low key. I have little mailboxes for my kids still living at home, and I tuck a note and small treat or gift in there (like socks with shrimp in the shape of hearts 😜) in the days leading up to Valentine's Day.
I made chocolate waffles for breakfast with strawberries and whipped cream (a new-to-me recipe one of you sent; I'll hopefully be posting soon - so yummy!).
For dinner, we did cheese fondue and molten lava cakes for dessert. It was just me, my husband and daughter at home that night, and I still can't get over how weird it is to have my kids grow up and leave me (or go on a date instead of hanging out with me, haha).
Ok, this is random, but one of you sent me an email declaring their favorite pizza (and one they make every Valentine's Day) is a mac and cheese topped pizza. HOW DO WE FEEL ABOUT THAT??
I actually can't wait to try it! Totally putting this homemade mac and cheese on the menu so we can have leftovers and make it. If you're also interested by that idea, these are the details she gave me:"Olive oil as the base, Italian seasonings, a mix of Parmesan & mozerella, and leftover mac and cheese sprinkling the top. Our local pizzeria had it for years and my kids went crazy over it."
And on that note, I'm also hoping to get my go-to anti-inflammatory meals posted this week for a quick look at what I've been eating (I received hundreds of messages asking for more details - so stay tuned for that!). Obviously the mac and cheese pizza will not be on that list. 😅😆
