Make one recipe, or make them all! You can easily swap the recipes in and out for the days of the week that work for you.
This chili can be made in the morning and kept warm in a slow cooker until dinner (or made a day ahead of time and reheated - the flavor gets better with time). Serve it with this easy, delicious cornbread.
This is a great make-ahead recipe; the wraps can be refrigerated or frozen for easy future lunches and dinners. They reheat well in the microwave or air fryer (for a crispier tortilla). Keep the sides simple: fresh fruit or veggies, chips and salsa, etc.
These pasta shells can be assembled the day before or the morning of to bake when needed. If you have leftover French bread, repurpose it into garlic bread to serve with this meal.
This soup is thick and creamy enough to serve in bread bowls. Cooked chicken is called for in this recipe and in the quinoa skillet meal - so plan accordingly if using rotisserie chicken or cooking chicken to prep for either/both of these recipes.
Leftovers of this meal are excellent wrapped in tortillas + extra cheese and toasted on a griddle or in a skillet. You can easily sub in a can of green chiles for the poblano chile in this recipe to make it even quicker and simpler.
P.S. Wow, it has been a week! Full of ups and downs - I know many of you are feeling the whiplash, too. I'm setting aside this weekend to refuel with my family; we are taking a quick trip to Utah for a football game, to spend time with my in-laws, and to watch a biannual broadcast from our church that always leaves me feeling uplifted and pointed more solidly toward Jesus Christ. Thank goodness, I could really use that right now. π
