Yes - the basement. Here's where I've been setting up shop for the last three months:
I'm using an air fryer, a hot plate, and an Instant Pot, all arranged strategically on top of an old dresser. π It's a rustic / minimal vibe.
These have been my life-savers in this season (affiliate links):
Egg Cooker: This egg cooker is such a funny little kitchen gadget that has been a surprisingly essential one for the last few months! It can do hard-boiled, soft-boiled, poached (!!), or scrambled. Especially love soft-boiled eggs on the sesame noodles below.
Instant Pot: This has really made a resurgence during the remodel since it can do so many things in one pot! It's been an absolute workhorse.
Slow Cooker: My old reliable! It's been especially great to make the work-to-evening transition in a literal construction zone a little less stressful when I can have dinner basically already done.
I'm not sure if I'd call it fun, but it HAS actually been kind of inspiring to make a few of our favorite POY meals and realize that they ARE in fact easy enough that I can make them in my basement.
Here are 10 meals that I've made over the last few weeks, all from on top of a dresser! Can personally certify that these are the very easiest - and all so yummy!
Ultimate shortcut meal! Packaged noodles, salad kit, soft-boiled eggs (made in that egg cooker!). Carbs, veg, protein, gang's all here in one happy bowl!
My younger daughter requested this as her birthday meal last week, and her sister made the whole thing, start to finish! No oven, so we did premade garlic bread in the air fryer. It was awesome.
Cannot even count the number of times this sandwich has made an appearance in our house (and trunk!?) the last few months. Probably the fastest and easiest recipe on the list!
Lots of easy pantry basics for this one! I served this with some frozen rice, gochujang sauce (more on the below), and some sliced cucumbers. 10/10 easy and healthy dinner!
It's been weeks and I'm STILL thinking about this pancake nonstop. I love it for a solo breakfast moment, but you can also scale it up to make pancakes for a crowd!
I've been keeping a jar of this on-hand to amp up all the store-bought meals we've been eating - like packaged fried rice, chicken nuggets, panko shrimp - and wow, what a revelation for the frozen foods game!
I'm so glad I was still able to make this soup happen this fall - it's one of my absolute cold-weather staples. I made it in the Instant Pot and added chicken, and it was like a warm hug, eaten on the couch. ❤️
