Things that I look forward to for summer, starting this weekend: pool days, smash burgers, s'mores bars, and this pasta salad. When we made this pasta salad a few days ago, we looked at each other and said "WOW. Why is this so good?"
Things I want you to know:
The flavors are so good - that Italian dressing with the garlic and fresh parsley and olive oil is both punchy and luscious all at the same time. Call me crazy but I often make extra dressing and sauce it twice - once when I make it, and again right before I serve it.
Outside of a potluck, this pasta salad is a WHOLE MEAL in one. It keeps beautifully and gets better with time. This is one of my favorite things to have in the fridge for quick summery lunches!
This recipe has been a longtime summer staple for me - we recently retested and made sure it was up to standards and made a few slight tweaks. I took a huge batch home and basically just kept eating forkfuls of it cold out of the fridge. I hope you love it too!
