
Welcome to Day 6 of the Sourdough Starter from Scratch Challenge! Today your job is to continue to strengthen your starter. It may or may not be doubling in volume in 10 to 12 hours, but it should be rising somewhat. Today, you'll discard most of your starter again (into the discard bucket), and you'll feed it with 100 grams each water and flour. I've switched to bread flour today in an effort to conserve my good, stone-milled flour, but you can continue to use the same flour you started with if you wish. As a reminder, we will put all of that discard to good use — stay tuned for discard recipes 🤗 Here's your first video of the day: If your starter doubles in volume today, you may want to see if it passes the float test: drop a spoonful of it in water, and if it floats, it passes the test. This does not mean your starter is 100% ready to be used in a loaf of bread yet, but it does mean that it's close. Regardless of how high it has risen, repeat the process of discarding most of your starter into your discard bucket and feeding it with fresh flour and water.
