As I mentioned in my earlier post, when I was living in India, most of my neighbours were Jain. So I learned many dishes using raw banana like samosa, kela vada, banana fries, pav bhaji, Dabeli and I loved it. You won't even notice the difference as long as banana are raw (green) and cooked right. You can use plantain instead of banana.
Most of our farali (vrat) dishes uses potatoes but since I started using raw banana, I prefer banana over potato as it has a great health benefits. Instead of deep frying, I used air fryer to fry these kachoris. They puffed up with crispy outer layer.
You can eat these during Hindu fasting. This is also vegan (use oil instead of ghee) and gluten free. This recipe makes around 6 kachori.

Preparation time: 20 minutes
Cooking Time: 25 minutes
Ingredients: 3 green (raw) banana 2 tbsp tapioca starch (sabudana flour) 2-3 green chili chopped Salt to taste Ghee or oil for cooking
Stuffing: 2 tbsp cashew chopped 2 tbsp walnut chopped 2 tbsp dry raisins/kishmish chopped 1 tbsp fresh/dry grated coconut Tiny pinch of salt Pinch of cumin powder
Procedure:
1. Remove both ends of banana and pressure cook for 3 whistle. Just add the water in cooker but not in vessel with banana. Once done, remove banana from cooker. Let it rest for 15-20 minutes until easy to handle. Then remove skin. Mash it to smooth paste (no lumps) using hands or grate with grater.
2. Add tapioca starch, chopped green chilies and salt to mashed banana. Blend everything with hands. Divide the dough in 6 portion and smooth balls.
3. In a separate bowl, prepare stuffing with chopped cashew, walnut, raisins, grated coconut, cumin powder and little salt. You can add slight sugar if you prefer sweet. You can also add paneer if you like.
4. Now prepare kachori. Take one ball of banana mixture, make well in ball on your palm, add little stuffing. Circle the bowl with your hands so the surface will be smooth. Flatten in between your palm like patty.
5. Pre heat air fryer on fry mode (200C, 25 mins). When it's hot, rub each kachori with little ghee or oil and put them in tray. Do not over crown the tray. Cook for 12 mins and then flip. You can then check every 3-4 mins and flip if needed. You will notice kachori puffs up and it will start turning lightly brown. Cook until is brown from all sides and crispy.

6. Serve these kachori with yogurt. These kachori are healthy and very delicious. Nuts and coconut adds texture and raisin makes it slight sweet. Absolutely delicious!
