It was designed to keep you organized and grounded into the process, because it takes time- up to 7+ days or more to complete.

So, what happens after you've successfully created a sourdough starter?

What's next?

You can't just walk away and expect it to work on a moment's notice!

You have to take care of it.

It's alive.

Ongoing care is one of the most highly debated subjects out there in sourdough-land. Just hop online for a hot second and your eyes will glaze over. I'm not getting into comparing methods here; I truly believe our diversity makes this community greater as a whole.

In my experience, your next step for ongoing care is best understood by example before diving into the mechanical specifics (which ultimately confuses everyone!).

So, let's say you have a house plant 🪴

It will need sunlight, water, proper temperature, and maybe some additional nutrients to stay alive. Correct?

Well, your sourdough starter is the same. It will require ongoing feedings of flour and water to maintain its strength (rising power), adequate temperature for optimal fermentation, and perhaps a spoonful of whole grain flour or rye flour to give it boost.

I would also argue that both plants and sourdough starters need personal TLC, too.

Bottom line?

All living things require care.

And it doesn't matter how you do it, just do it.

I shared the plant example above not to stress you out (I know, I know, you can't keep plants alive 😂). I shared it to establish a relatable framework for reference: what you put into the process is what you're going to get out.
