36 quick and easy meal ideas (in under 30 minutes)

We went out of town for the week of Thanksgiving and as always, I did my best to clear out the fridge before we left so we wouldn't come home to science experiments growing in the fridge.

The only downside to this though, is coming home to an empty fridge!

We ended up bringing home some leftovers from our trip, so instead of going grocery shopping first thing in the morning, I attempted a mini pantry challenge.

It's nothing official - just a short, 3-4 day stint where my goal was to NOT have to go to the grocery store.

The first step of any pantry challenge is to make a meal plan, but when you don't have that much food in the fridge to begin with, that can be tough…

And considering I'm in a season where I need dinner done CRAZY FAST, coming up with dinner ideas is that much more difficult!

Thankfully, this post with 36 quick and easy meal ideas has come to the rescue again. I looked at the meal ideas, took stock of what I had on hand, and made a plan:

 

  • I started with cubing and roasting butternut squash. I had two portions in the fridge that needed to get used up. (5 min to cube, 15 min to roast)
  • Then I made my blackened salmon, but substituted homemade chili seasoning since that was already made in the pantry. (10 min to bake)
  • I paired both of these with my favorite kale salad, but substituted apples and dried cranberries for the blueberries, since that's what we had on hand. I also used up a nearly empty bag of sliced almonds and some leftover asparagus from the trip. (10 min)


All in all, dinner was done in 30 minutes, I used up several containers of leftovers, and I didn't have to go to the grocery store! Plus we ate like kings!! πŸ™Œ
