Hi there reader,
I love going all out with a Classic Thanksgiving Menu, but I always have a crowd to feed. Sometimes, a small-scale, simple menu is nice- especially if you are cooking for only a few people or have space issues (or you are just overwhelmed with life 🥰)
You can still have a beautiful Thanksgiving feast! (and Prep Ahead)
This may be a simpler menu, but it doesn't skimp on flavor or that feeling of "specialness" we all want at our holiday table.
I've adapted my hugely popular Thanksgiving Turkey recipe for smaller party sizes, making this recipe simpler than ever! No basting or brining-- you won't believe how easy and quick it is!
Prep-Ahead Instructions: Defrost your turkey- a good rule of thumb is to allow one day in the fridge for every 5 lbs. of turkey. I always give myself an extra day to be safe.

Mashed Potatoes are the ultimate side dish for Thanksgiving! Follow my simple tips and step-by-step photos for the most perfect light, fluffy mashed potatoes! You can make them on the stove or in the Instant Pot.
Prep-Ahead Instructions: You can make mashed potatoes 1-2 days ahead and store them in a covered casserole dish in the fridge. To reheat: remove from the fridge an hour before baking in the oven- add more milk as needed to soften.

Everyone's Favorite Cranberry Salad
There isn't anything on my Thanksgiving menu that my kids love more than this fluffy Cranberry Salad. It's made with fresh cranberries, pineapple, cream cheese, and whipped cream.
Prep-Ahead Instructions: I definitely recommend making cranberry salad ahead of time. In fact, for best results, make it 1 day before serving.

The BEST Apple Crisp recipe is made with thinly sliced Granny Smith apples and baked with a cinnamon glaze and oatmeal crumb topping. This irresistible dessert is always a crowd favorite!
Prep-Ahead Instructions: Make the apple filling as instructed, but add an extra splash of lemon juice to keep the apples from turning brown. Store in an air-tight container in the fridge for up to one day. Make the crumb topping and store separately in the fridge.

If you are keeping things small-scale this year, consider adding a Thanksgiving Appetizer - they are simple to make and have a way of jazzing up a table. Happy Thanksgiving!
Enjoy!
Lauren
