Do you dislike boxed Rice-a-Roni, or have never heard of it, but are looking for a delicious and versatile side dish? Whichever camp you're in, you're going to LOVE this homemade Rice a Roni! Naturally gluten free and can easily be made vegetarian/vegan.
Feel free to change things up to vary the flavor profile: your choice of beef, chicken or vegetable broth, swap out the walnuts for pecans or pine nuts, use different herbs, and you can even add some veggies for added nutrition and flavor.
This is one of my most favorite rice side dishes!
