Hello reader It's a rather bleak grey day as I type. We've had a lot of them over the past month. So to offer a bit of cheer I have an indulgent and delicious brunch, lunch or suppertime treat for you this week. I will warn you now though, it's in no way suitable for vegans. CT has family roots in Wales, so it makes him particularly happy if I make something to honour St David's Day on the 1st of March. To this end, this week's post is a double Welsh whammy. It's a recipe for Welsh rarebit but with Wales' national vegetable, leeks, thrown into the mix. Leeks and cheese are an awesome combination and Welsh rarebit with sautéed leeks dials up this classic cheese on toast a few notches. It's ever so easy to make and only needs a few simple ingredients. Next time you need a bit of lunchtime cheer, make Welsh rarebit. Hop to it.
