What's an email-only recipe, you ask? It's an exclusive recipe that I'm only sharing with those who are on my email list, aka YOU! This recipe won't be on the blog, and instead will live here in this email. I'll be sending out email-only recipes at the beginning of every month.
So, since it's March 1, I figured I'd share these Chocolate Mint Brownies with you all -- boy oh boy are they decadent! They're thick, chocolate-y, fudgy, and topped with a chocolate mint icing. Bookmark these for when you have a chocolate craving!

CHOCOLATE MINT BROWNIES
Makes: 9, 12 or 16 brownies, depending on how you slice them
Ingredients:
1 cup unsalted butter, melted and cooled to room temperature
1 tablespoon brewed coffee
1 tablespoons vanilla extract
3 eggs, room temperature
1 cup cane sugar
1 cup brown sugar, lightly packed
1 cup all purpose flour (or sub GF all purpose flour)
3/4 cup cocoa powder
1 tsp salt
1 1/2 cups chocolate chips
For the icing:
1/4 cup butter, softened
1 tablespoon milk
2 tablespoons cocoa powder
1 cup powdered sugar
1/4 teaspoon peppermint extract, or more to taste
Directions:
1. Preheat oven to 350° and line an 8x8 or 9x9 baking dish with parchment paper; set aside.
2. Add melted butter to a large bowl, then add the coffee, vanilla, eggs, cane sugar, and brown sugar and whisk for 1 full minute until well incorporated.
3. Sift the flour, cocoa powder and salt into the large bowl, then partially mix with a rubber spatula. Add in the chocolate chips and fully mix until just combined (don't over-mix -- batter will be fairly thick).
4. Scoop batter into the prepared baking dish. Bake the brownies for 40-45 minutes or until a toothpick comes out clean. Let the brownies cool completely in the pan (this will take 1-2 hours), then pull on the parchment paper to remove them.
5. While the brownies are cooling, make the icing: with a hand mixer, whisk the butter, milk, cocoa powder, powdered sugar, and peppermint extract together. Taste it, then add more peppermint extract if you'd like.
6. Once the brownies are cool, add the icing on top. Slice and enjoy!
