Happy weekend!
Another January weekend is here, and guess what it involves? WORK. I know, I know. The winter months tend to be less social, so for me, it's a great opportunity to get ahead of schedule so I'm able to work less in the summer. But yes, I'm planning on recipe testing today and hopefully getting a few things photographed as well. Oh, but Miguel and I are going to a new breakfast spot tomorrow, which I'm really looking forward to.

Vegan Butternut Squash Mac and Cheese
As much as I love traditional mac and cheese, this vegan butternut squash version is SO creamy and delicious, and an excellent way to use up squash!
As you probably know by now, I adore cooking chicken in the slow cooker because it requires minimal effort on my end, and it always turns out perfectly. Add it to a taco with your favorite toppings -- hello taco Tuesday!

Honey Sriracha Brussels Sprouts
Ready in just 15 minutes, these sprouts are a little sweet, and little spicy and oh-so tasty!
I know I just said my favorite way to cook chicken is in the slow cooker (and it is!), but most often, I cook it on the stovetop. This skillet version cooks chicken completely in a skillet, so you only have one dish to wash afterward. Win!
Cauliflower Crustless Quiche
I love quiche, but I especially love a crustless quiche that's loaded with veggies, in this case, CAULIFLOWER (and cheese of course!)
