Mason Jar Salad Challenge Day 2: California Salad in a Jar ๐Ÿฅ—

It's day two of the challenge, and today I'm going to share another favorite - California Salad in a Jar. If you picked this one, then you're in for a treat. The sun-dried tomatoes, goat cheese crumbles, and balsamic vinaigrette make this salad a flavor bomb!

I was inspired to make this California salad into a mason jar salad after ordering it at a local restaurant. The original salad I tried had chicken, but I wanted to make this a no-cook recipe, so I opted for smoked deli turkey breast.

Preparation and Shopping Tips

If you can, use organic smoked turkey breast or any organic turkey breast. Using a higher-quality turkey keeps the salad clean and healthy. I like to get it straight from the deli counter at Wegmans, but I've also used packages of Applegate smoked turkey. I prefer thin slices of turkey, but you can have it sliced however you want.

You can swap in blue cheese or gorgonzola cheese for the goat cheese, but if you prefer a milder cheese than fresh mozzarella is delicious.

Make sure to grab sun-dried tomatoes in a bag, not in oil. I suppose you could use the ones in oil, but that would increase the fat and calories of these salads. Regular sundried tomatoes are just as delicious. You can find these in the Italian food section of the grocery store by the jarred pesto and pasta sauces. Sometimes they are with the jarred olives and banana peppers.

"I don't like tomatoes." What other vegetables can I use?

Any hearty vegetable that tastes well pickled would do fine in the dressing.

I typically use tomatoes, cucumbers, peppers, and onions. These vegetables end up "pickling" in the dressing, so any vegetable that would taste well pickled would work in the barricade layer. By the end of the week, these are delicious.

I think tomatoes pickle the best and are my favorite part of the salad. But if you don't like tomatoes, then use any hearty veggie.
