Nothing but coziness this week! This new recipe reminds me a bit of a creamy risotto but also of a classic broccoli mac. I love how quickly pearl barley cooks up and that slight chew that it has! It's so satisfying here with tender broccoli florets, white beans, and a cheesy roasted red pepper cashew sauce.
This sauce is a go-to of mine and has appeared on my site/socials before. The flavour and colour contrast of it in this comfort pot of goodness just really does it for me.
