Hello reader If you're partial to a nutritious and delicious meal in a bowl, I have you covered this week. This coming Sunday, it's Chinese New Year or the Lunar New Year as it's known in other parts of the world. I don't celebrate as such, but any excuse to ditch an old habit, learn something new, be kinder or just try to be healthier is always welcome. 2023 is the turn of the water rabbit. The rabbit is a symbol of longevity, peace, and prosperity and I reckon we could all do with that. The water rabbit is said to be thoughtful, friendly and easy going and that doesn't sound too bad either. Anyway, it seemed like a good opportunity to try out a new dish, Buddha's Delight. It's healthy, vegan and very commonly consumed during Chinese New Year. It's very much my version, but I've tried to stay as true to tradition as I could. Buddha's Delight is basically a Chinese stir-fry with lots of vegetables, tofu and noodles. You start by stir-frying, then finish by braising with a simple broth type sauce. Once you've prepped all the components, it only takes fifteen minutes to cook. I'm very fond of a one pan meal. I made enough for four, so we enjoyed it two nights running and ate it with chopsticks. It was even better on day two. If this dish doesn't seem quite substantial enough, here are a few rather more hearty vegan noodle/pasta dishes you might like. Keep cooking and stay safe.
