| My latest salad obsession! We've made a version of it 4 times in the last week or so. You get peppery flavours from the arugula, radicchio and fresh basil. The mustard tahini dressing is creamy and sharp. Pickled red onions lift everything up while the butter beans are soft and satiating. And the crunchy garlic bread crumbs are the perfect texture contrast. Salad party!
This salad and a baked potato/sweet potato is an ideal dinner for me. It's nourishing, easy, uses simple cooking methods, and I usually have most of these ingredients on hand during the Fall/Winter seasons.
