Warming, comforting, pantry-friendly, flavourful, and pretty simple to make! This vegan main is perfect with some warm rice or flatbread for dipping/scooping. I love taking the extra step of roasting the cauliflower with some of the spices that also go into the sauce. The caramelization combined with everything else is so good!
I was inspired by coconut milk curries that are popular in Southeast Asian cuisines when working on this recipe. I also try to uphold that traditional flavour balance of spicy, sour, salty, sweet and bitter. Additionally, the split red lentil addition to the sauce is inspired by dal, a lentil-based stew cooked in different ways all over India.
