It's always a good idea to rummage through your pantry and freezer every week to see what ingredients you might need to use up. This week for me it was a half box of pasta, some frozen bacon, and frozen peas that were almost too frosty. So I took my favorite quick meal template (pasta + Parmesan + greens) and added in bacon for a simple and delicious meal. This Pasta with Bacon and Peas is definitely going on my regular rotation list!!
A couple of years ago I made these adorable little mini pecan pies, and then last year I did a pumpkin pie version, and now I'm doing it with a savory pie! Or a quiche, rather. These cute little two-bite Mini Broccoli Cheddar Quiches make a fun grab-n-go meal prep breakfast, or a great finger food for brunch or Easter gatherings. They're so cute that they're sure to impress any guest!
What happens when you're craving something sweet while watching Anthony Bourdain travel around India? You start Googling saffron rice pudding recipes. And while my pantry wasn't stocked with the delicious ingredients needed to make an authentic kheer, I was able to make this super simple and delish creamy rice pudding, full of cinnamon, vanilla, and almonds. And I'm telling you, if you need a cheap and delicious dessert, this rice pudding is IT.
