Weekly Meal Plan + Valentine Treats! πŸ’–

Hello again!

I hope this email finds you well, and that you have some fun plans to look forward to this weekend. I think we're going to bake some heart-shaped sugar cookies to decorate as a weekend activity for the kids, because we are getting another round of freezing-cold temperatures outside.

In other news, we are all back on the mend over here after having Covid for the past few weeks (luckily, we got relatively mild cases). If you haven't seen much of me on social media, that's why! I'm slowly but surely getting back into a cooking groove, but after taking 2 weeks off, I'm totally out of my routine and feel like I'm moving slower than normal.

Hopefully we will get back into a regular recipe posting schedule soon!

I loved that creamy strawberry pie so much I could eat the whole thing myself, if my family and friends didn't beat me to it.

Dark Chocolate Avocado Truffles. These rich Dark Chocolate Truffles call for heart-healthy avocado instead of dairy! Calling for just a handful of ingredients, they are quick and easy to prepare, and will impress the socks off your loved ones!


Chocolate Peanut Butter Balls. These Peanut Butter Balls have a crisp center and are coated in dark chocolate, for a healthy buckeye copycat. Sweetened with dates, they're loaded with fiber to help balance your blood sugar!

Chocolate Pots De Creme. Chocolate Pots de CrΓ¨me are a rich and decadent dessert, that reminds me of a cross between a chocolate mousse and fudge. It makes such an impressive treat for a special holiday!

Friday: My Favorite Apple Walnut SaladThis flavorful salad is topped with sweet apples, crunchy walnuts, and is tossed with an easy balsamic vinaigrette. I love how it comes together in just minutes.

Saturday: Day off from cooking! (Leftovers or take-out)
