| Hello again! If you missed my email last week, it's because I wrote it, and then I hit "save" instead of "send." Ugh. Sorry about that! Since it's Halloween weekend, I have some healthy Halloween treats listed down below. It's gotten quite cold here in Kansas, so staying inside and making something together with my kids sounds like a perfect, cozy activity before we head out for trick or treating. By the way-- be sure to check the website on Monday for a new recipe that may help to give you (and your kids!) a little immune system boost after all of the Halloween fun. I've been feeding this to my kids all month long, and realized I should probably make it an official recipe to share, so stay tuned. In the meantime, you'll find a new meal plan filled with more warm and comforting ideas below, plus a few new recipes that I posted over the past two weeks. Note: When you have a moment, please leave a review + star rating on the recipes you try. Your feedback keeps me going! The comment section on my website is also the best place to ask me questions. I read them every morning! (Unlike my email inbox, which is a mess.) New Recipes! If you haven't visited my website this week, here's what you might have missed: Sweet Potato Black Bean Enchiladas. This vegan recipe is simple and comforting. The hearty filling cooks all together in one skillet, and then they bake to perfection in the oven, for an easy vegetarian dinner. No store-bought enchilada sauce required! I use a vegan cheese sauce on top, but if you're not dairy-free, you could also simply top it with cheese. Pumpkin Pasta Sauce. If you've been reading here for more than 5 years, you might have already seen this recipe, but it received an update so it's MUCH more user-friendly. This is one of my favorite Fall-inspired sauces! Pumpkin Cold Brew. Have you tried this popular drink from Starbucks? This easy dairy-free version is naturally sweetened, and reminds me of a pumpkin spice latte, but this is more coffee-forward. You could also use it in hot coffee, if you prefer! Cooking Videos If you enjoy watching me cook in my kitchen, be sure to check out my latest videos! I usually post at least one new tutorial every week. Elderberry Syrup. Here's how to make elderberry syrup at home. All you need is 5 ingredients to make homemade elderberry syrup, and it tastes better than any store-bought version, at a more affordable price! Healthy Pumpkin Bars. These have been a fan favorite for years, but I think it helps to actually watch how easy they are to prepare. Naturally gluten-free, grain-free, and so fluffy! Be sure to subscribe to my YouTube channel if you enjoy these! Dinner Ideas for the Week Need some dinner inspiration? Here are some delicious ideas to help!
