I'm sipping on my London Fog latte while sitting here writing to you, but as soon as this email is done, I think we'll spend the rest of the day outside. It's finally warm here in Kansas! Here's how to cook perfectly tender chicken breasts in your air fryer! This is my favorite way to cook chicken as part of my meal prep routine, so I can easily add it to our meals during the week. You can use fresh or frozen chicken breasts with this method, and I'll walk you through both ways! P.S. If you subscribe to my YouTube channel, you'll be notified as soon as I post my next one. I always post at least 1 new video per week! Here's What You Missed If you haven't visited my website this week, here's what's new: Vegan Pesto. I've been making this recipe every single week for the past month. I'm obsessed! It's amazing on a grilled cheese sandwich, over pasta, or just added to an easy lunch bowl for extra flavor. Lemon Bars. These lemon bars are more of a cross between cheesecake and lemon bars, and my son can't get enough of them! They have a crispy almond flour shortbread crust, and are made without eggs or dairy. Vegan Caesar Salad. Caesar salad has always been one of my favorites, and I could eat this combination all summer long! Be sure to try my homemade croutons if you want some added crunch on top. Use any leftover Caesar dressing as a dip for pizza or veggies this week! Dinner Ideas for the Week Need some dinner inspiration? Here are some delicious ideas to help! *Get the Shopping List: You can also view this week's meal plan here, and create a shopping list for it with the press of a button. Any customization you make will save to the browser you're using, so be sure to use your phone if you want to take it with you to the grocery store, or use the convenient "print" button to save your work. Sunday: Vegan Alfredo. This is a dish I would serve to guests, I love it so much! It's perfect for an easy weeknight dinner, and be sure to try it with crispy mushroom bacon on top for an unbelievable "Carbonara" style dish. Monday: Salmon Curry. My husband could eat curry every day of the week, and this variation is a great way to switch up the protein. Serve it over cauliflower rice for a properly combined meal, or with cooked quinoa for extra protein. (For a vegan version, try my Thai Chickpea Curry.) Tuesday: Ultimate Detox Soup with Kale Salad. This combination is a nutritional powerhouse! Use the leftovers for an easy lunch this week, too. Wednesday: Vegan Caesar Salad. You can top this with homemade croutons and cooked chickpeas for extra protein. (Or add any other protein you like! I used Air Fryer Chicken Breasts earlier this week.) Thursday: Vegan Pesto over pasta. Toss this new pesto sauce with your favorite sauteed veggies and pasta for an easy weeknight meal. I love it with sauteed tomatoes and red onion, with chickpea pasta. This amount of sauce will cover 8 to 12 ounces of pasta, depending on how "saucy" you like it to be. Friday: Spiralized Sweet Potato Skillet. This is a delicious way to enjoy the pizza flavors you love, without the crust! If you don't want to spiralize the veggies, just chop or shred them instead.
