Tart rhubarb and ruby red strawberries are some of the very first local fruits that make a triumphant return to markets every spring. Unsurprisingly, the two ingredients have wonderfully complementary aromas and flavors, which means they allow for creating gorgeous, colorful spring desserts!

While spring desserts can be just as indulgent as their winter counterparts, the bright, fresh flavors they use give them a lighter, brighter feel. The five desserts I'm presenting to you today are a delightful way to treat yourself and your loved ones with something a little extra special. Rhubarb Panna Cotta


Rhubarb Panna Cotta is an easy, yet dreamily creamy dessert that showcases rhubarb's sharp, bright taste. This recipe really makes the most of spring rhubarb by using it three ways: it starts with a rhubarb compote that's partly mixed into the panna cotta, and partly used to top it for a pop of sparkly pink. Poached rhubarb is then used as a garnish to take the presentation up a notch.

It's just as lovely as a post-dinner dessert as it is as a started for a spring brunch!

These Strawberry Rhubarb Pudding Cakes are inspired by a dessert my mom made every year using our backyard's rhubarb stalks. Every year when rhubarb and strawberry seasons roll around, I long for these comforting flavors again.

I like to make my strawberry rhubarb pudding cake in individual ramekins—it's such a cute dessert to serve as a sweet ending for an early summer brunch or dinner party!—but you can also bake this recipe in a single 8-in (20-cm) square pan. You'll find detailed instructions to make both the individual portions and the single pan format in my recipe.
