Lemon poppyseed French toast casserole

My stepmom introduced me to this rich and custardy lemon poppyseed French toast casserole that gets its decadence from a blend of lemon curd, cream cheese, brioche bread, and poppyseeds. While there is a resting period so that the thick slices of buttery brioche can absorb the milk and eggs, it's still a cinch to prepare. It's excellent warm out of the oven sprinkled with powdered sugar, though when eaten cold, it reminds me of a lemon cheesecake. Welcome and elegant anytime, it will also make a wonderful addition to your Mother's Day brunch table. 

In Laredo, I had chilaquiles toluqueños, a plate of fried corn tortillas smothered in a warm chorizo and tomato salsa. It was like a border-style take on the beloved Frito pie. If you love spice, corn tortillas, and cheese, you will love chilaquiles toluqueños, too.
