Hi reader,

Have you noticed that the Mediterranean Diet is pretty big right now?  Yep – and Greek recipes are right in the center of it.

And since it's 85, sunny and 100% humidity here, cooking these yummy Greek chicken kabobs in my Air Fryer was kind of nice.

Tender chicken marinated in a homemade Greek dressing with lots of veggies, cooked to perfection!

This is such a delicious and easy low-carb, gluten-free and dairy-free meal. It's one of those family friendly recipes everybody will enjoy!

to Save you Time and Money:

The Best Way To Make The Perfect Meatball!
  • When making meatballs, use an ice cream scoop.  I prefer the 1½-inch size.
  • When making meat patties (like burgers or tuna cakes) use a 1/3 or a ½ measuring cup.  
  • Spray a little cooking spray in the ice cream scoop/measuring cup (or dip it in water) now and then. 
  • The water and cooking spray will keep the meatballs from sticking to the measuring devices.
