We are getting ready to wrap up my son's school year, so I'm finishing up my "room mom" duties this weekend, and I am VERY much looking forward to being done with virtual school! This Chocolate Hazelnut Smoothie tastes like a Nutella milkshake, only it's made without dairy or refined sugar. You could probably sneak some veggies in here, like frozen cauliflower or a handful of spinach, for some extra nutrition, too. You can't taste the black beans inside at all, and they're gluten-free, oil-free, and vegan, for those with special dietary needs. I walk you through the process step by step in this video, so you'll know what to expect the batter to look like. P.S. Here's What You Missed If you haven't visited my website this week, here's what's new: Vegan Lasagna. This lasagna is the easiest version I could come up with, using as many short-cuts as possible. There's NOTHING to cook ahead of time, so you can assemble it quickly, without using meat or dairy. And it's soooo satisfying! My meat-eating dad has been loving all of the leftovers I send him from my testing rounds. Vegan Parmesan Cheese. I use this sprinkle on everything and always keep a jar in my fridge! All you need is 3 simple ingredients to make it, and it lasts for at least a month when you keep it chilled. (Probably much longer if you keep it frozen instead!) Chocolate Hazelnut Smoothie. This recipe got a major makeover this year (I originally posted it in 2014!) and it tastes even better that before. I hope you'll love it! Dinner Ideas for the Week Need some dinner inspiration? Here are some delicious ideas to help! *Get the Shopping List: You can also view this week's meal plan here, and create a shopping list for it with the press of a button. Any customization you make will save to the browser you're using, so be sure to use your phone if you want to take it with you to the grocery store, or use the convenient "print" button to save your work. Sunday: Vegan Lasagna. Making this over the weekend means you might have leftovers for an easy lunch the next day! I've even eaten it cold from the fridge, because it's that delicious. Monday: Cauliflower Steaks with Chimichurri Sauce. This combination is my all-time favorite. And then I want to add the chimichurri to everything else I eat for the rest of the week! Tuesday: Slow Cooker Chicken Tacos. I love how many veggies you can sneak into these easy tacos. My husband couldn't even tell after I told him what was inside! For a vegetarian taco, try my Jackfruit Tacos or Vegan Tacos. Use leftover chimichurri sauce on any of these tacos-- it will take them to the NEXT LEVEL. Wednesday: Vegan Stew. This recipe tastes remarkably like the real thing, without using meat. I love how simple it is to prepare! Serve it with crusty bread or a side salad, for a complete meal. Thursday: Favorite Beet Salad. I'm obsessed with these salad toppings. Add your favorite protein on top to make it extra-filling. Friday: Mediterranean Socca Pizza. I could eat this type of pizza every week. You don't even need cheese on top, since the toppings are flavorful on their own. Saturday: Day off from cooking!
