Strawberry Season! If you live locally (south orange county, CA - not many of you), the Ecology Center has the BEST ones! The kids snack on them often, I've made this cake from SKCC a few times, always revisit these bars, have made a quick, pico de gallo-esque situation for salmon and a quick compote for waffles and pancakes on weekends. We double it, but it's simply: 1 lb. strawberries, chopped 1 4 oz. container raspberries handful of blueberries squeeze of lemon 1/4 cup sugar or maple Put all of the berries in a pot, once warm, add the lemon and sugar and give it a stir. Simmer gently until the berries are soft and broken down and the sugar has dissolved, about 15 minutes. Set aside to cool. Store covered in the fridge for up to two weeks. Use on waffles, pancakes, oats, yogurt etc. Using maple will yield a looser texture. Grocery things.
