Tomato & Corn Galette: Not Perfect, But Delicious πŸ…πŸ…πŸŒ½πŸŒ½πŸŒΏπŸŒΏ

Oh Friends, where to begin?

On Monday, we dropped our oldest, Ella, off at boarding school. Even though I knew I would be picking her up two days later for a hockey tournament, those two days felt interminable.

For the past 6 months, as the prospect of her leaving became more real, I've often found myself thinking, "It's going to be great!" And I truly believe this. But I bumped into a friend at our little co-op on Tuesday, and she asked me how I was, and I said: "Great! Everything is great."

And then I burst into tears. And I laughed/cried while I loaded my tote with enough ears of corn to feed the neighborhood and walked out sobbing.

Over the years, as I've pushed strollers through our streets, often with a baby strapped to my back, I can't tell you how many times people passing by would say: Enjoy it! It goes so fast!

And while I always smiled and nodded, it never, ever felt fast. And somehow, here we are. My oldest is gone! Friends, this is the most first-world problem anyone could have, but still: it feels like the end of an era. And I wasn't prepared for how sad I would feel.

But I am fine. We are all fine. This week I cooked a lot: an enormous batch of ratatouille, many ears of corn, several loaves of sourdough, and this tomato galette, an old favorite recipe from David Lebovitz. I am not going to lie, the dough gave me problems—it stuck, tore, and crumbled—but I pushed on, balled it back up, and re-rolled it without issue. In the end, the crust baked up beautifully, and the whole galette—filled with sautΓ©ed onions, corn, fresh tomatoes, and basil—tasted like summer all wrapped up in one delicious, buttery, cornmeal-flecked bundle.

How's that for a recipe endorsement? This dough is a total pain to work with, but I think you should make it anyway! And I truly think you should: It's going to be great.
