I know this is a super busy time of year for a lot of families - especially if you have younger kids. I remember the days of field days, end-of-the-year concerts, field trips, sports banquets, proms, and all the other activities packed into these last few weeks of school. And if your kids are graduating, then you have all of that plus the emotions that come along with it.
So take a deep breath - you've got this.
This week I put together a simple mini prep plan to help make dinner a little easier. If you need a quick dinner during the week, the chicken parmesan or turkey lettuce wraps are great options. If you'd rather let dinner cook all day and come home to something ready, the Italian shredded beef is perfect.
How to Use This Mini-Prep Dinner Plan
Each week, this plan gives you three dinners you can fully prep or partially prep ahead of time so weeknights feel easier. The goal is to make dinner the least stressful part of your day.
