Next to my Protein Power Mason Jar Salad, this is probably one of the mason jar salads I’ve made the most over the years.
It’s simple, fresh, filling, and has so much flavor.
This one starts with balsamic vinaigrette, then gets layered with tomatoes, cucumbers, chickpeas, sun-dried tomatoes, goat cheese, turkey, and arugula.
It feels a little fancy, but it’s still really easy to prep.
The sun-dried tomatoes and goat cheese give it so much flavor, the turkey and chickpeas make it filling, and the arugula adds that fresh peppery bite that makes the whole salad taste so good.
It’s the kind of lunch I actually look forward to eating — and that’s really the whole point of mason jar salads.
Healthy lunches don’t need to feel boring, complicated, or like something you’re forcing yourself to eat.
They can be fresh, flavorful, filling, and ready in the fridge when you need them.
Since we’ve been talking about mason jar salads all week, I wanted to do a quick recap of the best tips to help you make them work.
Tip 1: Use the right jars. For meal-size salads, I love 32-ounce wide-mouth mason jars. They’re easy to fill, easy to layer, and easy to pour into a bowl when you’re ready to eat. Purchase from Amazon here.
Tip 2: Layer them correctly. Dressing goes on the bottom, hearty veggies go next, then beans, grains, protein, cheese, and greens go on top. This is what keeps your salads fresh and helps prevent soggy lettuce.
Tip 3: Let cooked ingredients cool first. If you’re adding chicken, taco meat, steak, pasta, quinoa, or anything cooked, make sure it’s completely cooled before adding it to the jar.
Tip 4: Don’t overcomplicate it. You don’t need to make five different salads every week. Pick one recipe, prep 4–5 jars, and keep lunch simple.
Tip 5: Switch up the small things. Use a different dressing, salsa, greens, veggies, cheese, or protein to make the same basic salad feel new without adding extra work.
Tip 6: Make lunch the easiest part of your week. This is the big one. When lunch is already made, it’s so much easier to skip takeout, avoid random snacking, eat more veggies, and feel prepared.
That’s why I love mason jar salads so much. They’re not just cute salads in a jar. They’re a simple lunch system.
