I don't know about you, but after the holiday rush, I'm ready to take it easy. The days between Christmas and New Year's are the perfect time for some much-needed relaxation, and the last thing I want to be doing is spending lots of time cooking.
Fortunately, there are usually plenty of holiday leftovers to choose from in the fridge. You can use them to make meal time easy. Instead of making dinner from scratch, toss together leftover meat and veggies to make an easy casserole, cozy soup, or pasta bake.
