This is the Lebanese bread that stole my heart--and I hear from so many people that they want to learn this special tradition, too. It's one that our Sittos and Tetas passed down...truly an art that we do not want to lose.
The bread is amazing! It's very thin, soft, chewy, and a delicious way to eat everything on the plate. Transforms every bite for the better!
I worked tirelessly to create a recipe (with all of the secrets) in my new book, Lebanese Baking, that allows us to make this bread in a variety of ways: tossing the dough from hand to hand as Sitto did or simply rolled and stretched on the special kara pillow. Bake on a saj dome, or in the oven using a hot baking steel.
I knew that we would need all of the right equipment to make this wonderful baking experience do-able, easy, and a joy.

Saj Bread Baking Set
The kara pillow helps shape the thin dough and transfer to the saj or oven. The towels are used to cover the rising dough and then below and above the baked flatbreads to help soften them. They are large, absorbent, soft!
The pillow cover is removable.
All have my charming Lebanese Baking pattern. And machine wash beautifully.
