I still remember the first time I tried freezer prep. It was over ten years ago, and honestly? I wasn't exactly a pro in the kitchen. My cooking skills were pretty basic—think taco meat, meatballs, sauce, and shredded chicken. But I knew I needed a way to get dinner on the table fast after a long day at work.
So I started small. I prepped a few simple things, popped them in the freezer, and suddenly, dinnertime felt so much easier. No more scrambling at 6 PM, no more last-minute takeout. Just quick, homemade meals ready to go.
And here's the crazy part—I still make those same recipes today!
They're tried-and-true, totally beginner-friendly, and perfect for stocking your freezer without spending hours in the kitchen.
Here are my go-to freezer prep staples:
🥑 Taco Meat – We eat a lot of tacos in my house, so making taco meat in bulk was a no-brainer. I cook up three to four batches at once, portion it out, and freeze it. Then, when it's taco night (or I need an easy meal), I just reheat and serve it in tacos, salads, or burrito bowls. Want to make it even easier? Try this homemade taco seasoning or cook a big batch in the crockpot.
🍝 Red Clam Sauce – Sounds fancy, but it's actually super simple—just 30 minutes and you're done. I make three to four batches at a time and freeze them in portions for quick pasta nights. 🍗 Shredded Chicken – This is my secret weapon for easy meals. I buy chicken in bulk, cook and shred it, then freeze it in meal-sized portions. It's perfect for wraps, salads, or tossing into soups. If you haven't tried this shredded chicken method, you're missing out!
🧆 Meatballs – If I had to choose just one freezer meal to make forever, it would be these turkey meatballs. I love freezing them fully cooked, so I can just warm them up in sauce and serve over pasta, in subs, or on their own. I usually make two to three batches at once—it takes the same time as making one, so why not?
💡 Pro Tip: The magic of freezer prep is that you're already cooking—so making extra barely adds any time. Double or triple your favorite recipes and stock your freezer in no time.
