| In the spirit of celebrating comfort food (it's that time of year, right??), I've rounded up eight of my all-time favorite cozy meals. These recipes are feel-good comfort in every irresistible bite (no judgment here if you go back for seconds...or thirds!). Bonus! Almost all of these recipes are either a set-it-and-forget-it meal or can be made ahead of time. Here's a tip to lighten up comfort food-type meals: serve them with a light and fresh side dish, like roasted vegetables, steamed green beans, a thrown-together green salad, or simple cut-up fresh fruit and vegetables. Most of these recipes have been around a long time - they are tried-and-true favorites. I hope you find one on the list to make and love! 1. Mississippi Pot Roast I literally cannot get over how easy and delicious this pot roast is (it's a from-scratch recipe, so you don't need to rely on any storebought packets). The gravy makes itself! It's become our go-to slow cooker roast recipe. 2. The Best Chicken (or Turkey) Pot Pie This fantastic pot pie can be made with a biscuit or pie crust topping. It can be assembled and refrigerated (or frozen!) to bake when needed. 3. Shepherd's Pie Every single one of my kids would tell you that Shepherd's Pie is one of their favorite meals ever. This is such a classic....and SO, SO GOOD. It makes a wonderful take-in meal for others, and it can be assembled and refrigerated to bake when needed. 4. Chicken Noodle Stew Thick, creamy, and hearty, this chicken noodle stew is incredibly delicious. The homestyle noodles make all the difference! 5. The Best Glazed Meatloaf I think the title of this email should have actually been "Meals Mel's Kids Fight Over" - although, after typing that out, I can see how it's probably good I went with the other title. π But really, this meatloaf is a much-coveted meal (especially the leftovers!). We're picky about meatloaf; this is the best of the best. 6. Ultimate Beef Stroganoff {Slow Cooker or Instant Pot} Another slow cooker favorite, this stroganoff is delicious served over noodles, rice or potatoes! It's been a family favorite for over 15 years. 7. Cheesy Broccoli Chicken and Rice Casserole Casseroles have largely fallen on the wrong side of food history, thanks to the sketchy combinations I grew up eating. However, this cheesy chicken and broccoli rice casserole is impossible not to love. It's what every casserole should be! (DELICIOUS!) 8. Baked Cheesy Chicken Spaghetti This recipe went bonkers when I posted it a few years ago. It has maintained it's popularity...and is one of my go-to meals to take into friends.
