I've had so many questions and requests coming in lately for ideas on how to use up those last little leftover bits of canned pumpkin (we've all been there!), so I decided to put together this go-to resource for you to use if you're faced with the same question.
Did know canned pumpkin is an extremely versatile ingredient??
It can be used in MANY recipes that don't call for pumpkin, adding depth of flavor, a hint of sweetness, and contributing to a fluffier texture in baked goods.
P.S. I hope this week is shaping up well for you! I ended up with a little virus that has kept me down for a few days. Not how I planned my week, but I'm grateful to be feeling a bit better.
My second child, Walker, turns 20 years old today. I know every parent in the history of ever says this when one of their kids turns a year older, but: I can't believe it! The fact that I have kids exiting the teenage years is mind-blowing to me when I still often feel like a teenager myself. π
Walker is smart, funny (like, so funny), hard-working, and uniquely talented in so many amazing ways. He absolutely despises being the center of attention, so I'll keep this tribute to a minimum, but I'm very proud to be his mom.
He is currently serving a church mission in the Philippines...and I'm grateful my humble, small package got to him on time. I sent it by boat, which takes 2 to 3 months. Because he is serving on a remote-ish island, it's always a little chancy that things will get to him! The birthday package basically consisted of a new tie for him and his companion, handwritten notes from family, and stuffed full of fruit snacks, cold cereal cups, and nerd clusters. π
Thanks for letting me ramble! I hope you are having a very, very good week. π
