| Hello reader Half term ended up being quite a busy week for us. We have various issues with our house and it seemed as though the place was full of surveyors and inspectors trying to get to the root of the problem. We haven't yet heard if they have or not. On a more fun note, we loved the vegan cafe we visited. It's called Crow Spotter and it's been open for two years. How did I not know about it? Anyway, I do now, so I'll be back. If you hate wasting food as much as I do, you probably have all sorts of tips and tricks for using up leftovers. Hit REPLY and let me know. My mother invariably makes soup with leftovers. I do that sometimes too. However, it very much depends on what it is that's leftover. When it comes to mashed potatoes, my go to is a leftover mashed potato omelette. It's ever so simple to make and quick too, so it's perfect for midweek meals. It's also tasty, filling yet light at the same time. And only five ingredients needed. How much mash is leftover determines whether we have it as a main meal or a light lunch. The omelette is so good, it's almost worth making mashed potatoes specifically for it.
If this isn't for you though, I do have a few other ideas in the post on what to do with leftover mash. It's hard to believe it's November already, especially as the temperature is so mild. It's a worry for sure, but the upside is we've not had to turn the heating on yet. This week brings Bonfire Night and if you fancy baking something for the occassion, these spiced toffee apple bonfire cakes are rather good. Popular posts this week include:

P.S. Please do let me know if you make any of my recipes and don't forget to star rate them. It really helps to make them more visible on search engines. I especially appreciate questions or feedback via comments on the blog posts. |
