 | ~ Here's why it's the best ~ Once you try my fresh, herb-laden falafel, there's no going back! They basis of falafel is chickpea, and skinless dried fava beans if you can find those, so the healthy quotient is high. Plant-based protein, fiber. My method is frying, but you can coat them with olive oil and bake. Not the same but still so good. Make a tahini sauce with a few simple tricks to make it great, for falafel-dipping. And/or drizzle the sauce on a Falafel Pita Roll Up. OMG. Make a pot of soup, and this one is packed with lentils, bulgur and finished with minty, garlicky olive oil. Been loving breakfast for dinner lately with these simple Soft-Scrambled Eggs with Asparagus. Any and all of these recipes are made even better with laban (yogurt) or labneh.
