Hi There,


Now that's summer's here, I hope you're spending lots of time outside soaking up the sun and the fresh air. We've been picnicking on the weekends, and I want to share a super-simple side dish with you.

 

It's an easy Cherry Tomato Salad that's packed with herbs, touched with bacon, and drizzled with the lightest touch of extra virgin olive oil and balsamic vinegar. So, so good.  

 

Here's why I think you'll love it:

  • Tomatoes + olive oil are a match made in heaven. Tomatoes contain lycopene, a powerful phytonutrient that's best absorbed when paired with fat (such as olive oil).
  • It keeps like a dream. You can make it the day before and tuck it in the fridge (or cooler) until you're ready to heat - the celery will still be crisp and the flavors will marry nicely.
  • It's loaded with herbs. And that means tons of flavor AND loads of micronutrients, too.
