One of the things I love most about cooking is how the simplest of ingredients can be the most nourishing. It feels like superfoods from far-off places are always trending, but sometimes it's the basics that yield the biggest impact.
Take vinegar for example. It's a pretty simple, basic ingredient, right? Yet, it can have a big impact on both blood sugar balance and digestive health!
And when you infuse it with herbs or fruit, you can amplify its flavor for big results.
Here's the skinny:
- Vinegar supports better blood sugar balance. Stirring a little vinegar into water and sipping on it during your meal supports better blood sugar balance - especially if your meal is high in carbs.
- Vinegar supports better digestion. Tasting something sour (or bitter) kickstarts the digestive process - readying your body for meals. This might be a cocktail of bitters and mineral water, or a salad of bitter greens drizzled with olive oil and nice, sharp vinegar.
- It's a fermented food. Vinegar is a fermented food, but many of the store-bought vinegars are pasteurized. Instead, look for vinegar that is labeled as "raw" or "living."
- It brings BIG flavor. I tend to favor herb-infused vinegars where possible - the flavor of herbs combined with the acidity of vinegar gives a lift to heavy meals - it's perfect drizzled over sautéed greens, or smashed with fruit and honey to make a shrub.
