The Big Boom of pandemic cooking is definitively dead, along with many, many sourdough starters and green onion windowboxes, reports Rachel Tepper Paley in our forthcoming cover story this week, but there's one survivor — nay thriver: the backyard pizza oven. The portable pizza oven, driven by Ooni and other young brands, is the hottest $300 backyard accessory, showing no sign of cooling off.
Consider this your teaser for our week of portable pizza goodness; our editors are hook, line, and sinker for these accessible pizza ovens, and given that we're all pizza-obsessed already, there's been significant pizza chatter on Slack as we get ready to share our favorite backyard pizza gear, recipes, and tips. To cue it up, I asked everyone their favorite pizza topping that might feel a little surprising. Here's a peek inside our Slack thread (copious emojis not included).
For me, the most offbeat yet most beloved pizza I know is this sausage and sauerkraut situation, where the sharp tang of the sauerkraut balances the rich fattiness of the mozzarella. I also second all the potato pizza love; yes, it's carbs on carbs, but potatoes have a surprising acidity that is really lovely on pizza. Sweet potatoes, rosemary, and Gruyere is also a fantastic combo that feels like you're showing off, but tastes like magic. Regardless of how I'm topping it though, I'm probably using this easy, high-flavor dough, which is great for the grill (or the backyard oven).

Speaking of bark, the outdoor pizza oven has even made it to my kids' favorite show, Bluey, where their dad sees a neighbor making pizza over the fence, stares, asks where he got his oven, then says, in an immediate bark that makes my daughter throw her head back and laugh uproariously every time: "Kids! We're going to Hammerbarn." (P.S. I don't care if you have kids or not; the 7-minute episodes of Bluey are pure joy and this is a great read on this little jewel of a show.)
