Hi hi! How's everybody doing!? Here today to share some meatless meals with you from my new book Everyday Dinners! There is a HUGE meatless section with 40+ recipes, not to mention countless vegetarian sauces and dressings to spice things up. These recipes have been really popular so far, so here's a little peek at some veg-forward dishes (don't worry, we do not skimp on the cheese!). Don't be fooled - this is a salad about cheese. It's sweet, salty, creamy, fresh. And colorful! I am in love with searing halloumi and it works perfectly in this salad. When peaches and plums are in season it really does not get better than this. In love with this! A perfect treat if you're having company for brunch, or any time you have a lot of mouths to feed! The fillings can totally be customized based on what you like, but I think veggies shine here. No matter what you'll get a crusty, creamy, savory treat! Yum yum. I think chili is JUST as good without meat and you can't convince me I'm wrong! If you take the time to prep a bit ahead of time, this will come together quick. Just don't skimp on the toppings! This is a favorite from Everyday Dinners. This is not your average baked potato. The flavors here are indulgent and unique but in the very best way. And did I mention texture? The crispy chickpeas really give this dish depth and make it a perfect snack or hearty enough for dinner. Does it get any better than brown butter mushrooms? I think not. This pasta is embarrassingly easy and a hit every. time. Use whatever noodles you like, but I prefer a short pasta here. Throw on some herbs for color and you have yourself a beautiful weeknight dinner. Honestly, meatless meals are some of my favorite and usually what I go to during the week.
