Always let your meat rest before cutting into it!
"When you cook meat, the muscle fibers and the proteins begin to shrink and squeeze out moisture," certified food scientist Guy Crosby told The Institute of Food Technologists.
"If you immediately slice a piece of (cooked) meat, the moisture that has been squeezed out of the muscle fibers will run out."
The solution… let the meat rest for 15 to 20 minutes before cutting into it. At this point the fibers will start to soak up some of the moisture, meaning less moisture loss once you slice into it.
Be patient, give it time, and your steak will have a much higher chance of coming out moist and delicious.
