Here's your Meal Plan! 🍪

Hello again!

I hope this email finds you well, and that you're sipping on something as delicious as I am right now. I'm currently obsessed with the Brownie Batter Smoothie from the 5-Day Summer Reset after my morning workouts. (And yes, I've recently committed to a morning workout routine-- I'll share more on that later, if you're interested!)

We survived another week of my kids going to two different summer camps (which means I'm in the car a LOT), so I haven't nailed down my next summer ice cream flavor yet, but I did manage to get 2 new almond flour recipes up for you!

Baking with almond flour is tricky, so this banana bread took me nearly 30 attempts to get right over the past few months. Luckily, I think it was worth it, because it's already received several glowing reviews!

Chewy Almond Flour Cookies. These are my attempt at making Tollhouse cookies, only out of almond flour. They are chewy and delicious, and I've included tips in this video on how to freeze & bake frozen cookie dough, so you can have a freshly baked cookie anytime!

Here's What You Missed

If you haven't visited my website this week, here's what's new:

Almond Flour Banana Bread. The perfect grain-free recipe! If you need an egg-free version, be sure to check out my Vegan Almond Flour Banana Bread.

Cherry Chocolate Avocado Pudding. This recipe got an update (and much prettier photos!) so now it includes the weight in grams, plus tips for getting perfect, creamy pudding that doesn't taste like avocado.

Orange-Infused Water. My sister-in-law served this water at my baby shower years ago, and it's been a hit ever since! It's a great drink when you want something with a little flavor, but no added sugar.

Vegan Almond Flour Cookies. These remind me of a buttery shortbread cookie, studded with chocolate chips. They are crispy on the outside, and tender on the inside.

Chewy Almond Flour Cookies. The newest addition to my cookie collection! These are made with coconut sugar, so they have a chewier texture than the version above. They remind me of Nestle Tollhouse cookies, especially when they are still warm from the oven.



Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help!

Sunday: Pesto Pasta Salad. The ultimate summer meal. It's so refreshing and filling, without using any dairy.

Monday: Veggie Burgers with Baked French Fries. For an easier night in the future, freeze a double batch of these burgers, so you can reheat them later!

And try my homemade ketchup, if you have a spare 5 minutes.

Tuesday: Salad or grain bowls topped with Crispy Baked Tofu and Peanut Dressing. I'm obsessed with this combination. It's made my whole family fall in love with tofu! We usually serve it as a salad bar, so everyone can pick their own toppings.

Wednesday: Favorite Veggie Wraps. My family pretty much eats these every week. Only lately, we've been using romesco as the sauce!

Thursday: Ratatouille. The perfect way to enjoy your summer veggies. I like to serve it quinoa that I cook in the Instant Pot.

Friday: Vegan Lasagna. Bake this once, and enjoy the leftovers over the weekend!

Saturday: Day off from cooking! (Leftovers or take-out)
