| Hello again! Is it feeling extra-hot where you are? I've been melting this week! It feels like the perfect time to start whipping up some watermelon sorbet or watermelon juice to keep hydrated. With all of this heat, I've decided that I'm going to make it my mission to share a NEW ice cream recipe with you each week this summer. Doesn't that sound like a fun challenge? I'm kicking things off with the Vegan Mint Chip Ice Cream. It's so easy to make, and my kids approve! (They can't even tell that it's dairy-free.) It tastes like it came from a fancy coffee shop, but it's 100% fruit-sweetened and is made with home brewed coffee. P.S. Serve it on a salad, bowl, or in a pita for lunch this week! Falafel Bowls. Here's my favorite way to serve the baked falafel. It's perfect for meal prep, and takes 5 minutes to assemble when you have the components ready in the fridge. Mint Chip Ice Cream. Dinner Ideas for the Week Need some dinner inspiration? Sunday: Quinoa Salad. This is an easy weekend meal, and the leftovers will make your life easier tomorrow, too. Monday: Baked Falafel Bowls. Take advantage of last night's leftovers and make Falafel Bowls with Creamy Tahini Dill Dressing, with your favorite hummus and veggies. Tuesday: Kale Pesto Pasta. A great way to sneak a bunch of kale into your life! Feel free to serve it with veggie noodles, or over your favorite protein, to change things up. Wednesday: Smoked Salmon Salad with Dill Dressing. I'm obsessed with the dressing on this salad! If you're not a fan of smoked salmon, feel free to swap it for another protein of your choice. Thursday: Instant Pot Butter Chicken. The fact that you can cook a side of rice at the SAME TIME makes this recipe a game-changer. Feel free to try a different protein if you like! Friday: Vegan Stuffed Shells. You'll love the creamy filling in this one, which also happens to be a great source of plant-based protein. Saturday: Day off from cooking!
