| | I hope you're all having a lovely weekend. I wanted to send you one of my favourite recipes at the moment – these bites are gooey, chocolaty and just all round delicious! Made with oats, peanut butter, dates and chocolate chips, they're perfect with a hot, frothy coffee as a mid-morning snack.

The base is made from a blend of soft dates, oats and peanut butter, with the dark chocolate chips adding a great crunch. It's then topped in a rich chocolate icing made from cacao powder and dates. We love to cut them into little bites and enjoy them throughout the week. | | | | | | | | | | ingredients | | | | | For the base
10 Medjool dates, pitted 200g oats 6 tablespoons of smooth peanut butter 4 tablespoons of almond milk Handful of dark chocolate, cut into small pieces
For the topping
10 Medjool dates, pitted 3 tablespoons of cacao powder 1 tablespoon of maple syrup | | method | | | | | Line a large loaf tin with baking paper.
Make the base by placing the pitted dates, oats, almond milk and peanut butter into a powerful food processor and blend until the mixture comes together to form a thick, sticky mix. At this point, add the dark chocolate pieces and pulse a few times to mix through.
Spoon the batter into the lined loaf tin. Smooth over and press down to ensure everything is even. Place in the fridge to set for at least 1 hour.
While the base is setting, make the topping by placing the dates, maple syrup and cacao powder into a powerful food processor and blending until a thick, sticky mix forms. You may want to add a dash of almond milk if the mixture needs some help to blend.
Remove the base from the fridge and spoon over the topping, smoothing over to cover the whole thing. Place back in the fridge to set for 1 hour.
Once set, cut into equal bites and enjoy. | | | | | | | | | | |
