Hello reader It's a truth universally acknowledged that we Brits like to complain about the weather. I hope Jane Austen won't mind me ripping her off. Anyway, I'm too hot and our garden and allotment are desperate for rain. I think we live in a mini micro climate which is drier than anywhere else in this area. I could do with a glass of elderflower champagne to cool down. So could everyone else according to those visiting my blog this week. Elderflower champagne is by far and away the most popular post. I've just got a batch soaking now, but it won't be ready for another two weeks, so I'll just have exercise a little patience. Do you make elderflower champagne? Or do you prefer elderflower cordial? One of the plusses of elderflower cordial is that there's no danger of exploding bottles. But there's nothing quite like a glass of real natural fizz. This has nothing to do with this week's post which is all about how to make fluffy quinoa every time. I've been eating quinoa for nearly twenty five years now and it's one of my favourite grains (although technically it's not a grain). The recipe is actually for quinoa with pesto, but you use the same method for plain quinoa too. The addition of pesto makes quinoa into a meal in its own right. I often have it for lunch. But it also makes a great side for all sorts of dishes. Do try it if you haven't already and let me know what you think. Despite making carrot top pesto last week, I actually used wild garlic pesto as I still had a jar to use up in the fridge. I just run with whatever pesto I happen to have at the time. Despite the hot and humid weather, I made a batch of these real chocolate brownies at the weekend. The photos were just awful and I couldn't bear them any more. So I've updated the post with brand new images and a step-by-step process. We've been eating them for pudding with ice-cream. There are still a few left, which is lucky as they're really sumptuous.
