Now that summer's here, I wanted to share a quick recipe for the grill with you. It's simple, easy-to-make and packed with flavor.
You start by marinating chicken in yogurt, herbs, lemon and turmeric, then grill it on skewers. Then you serve it over basmati rice with a yogurt-herb sauce on the side. Brilliant.
It is super easy and makes a delicious and nutrient-dense weeknight meal.
Here's the skinny:
- Turmeric is a powerhouse. It's rich in bioactive compounds such as curcumin, which combats inflammation while also supporting the heart and brain.
- Yogurt is rich in beneficial bacteria that support gut health and immune system function.
- It's delicious. Turmeric balances beautifully with black pepper, lemon, and cilantro. As a result the chicken is full of flavor, and delicious when paired with steamed rice dotted with pumpkin seeds and cilantro.
